What's it like to be a Sous Chef?
A Sous Chef helps the Head Chef lead a team of kitchen staff during preparation and service. The role is similar to an Assistant Manager in a business operation. A Sous Chef may manage different aspects of the kitchen and may help in coordinating with the front of house to ensure the smooth operation of food service.
Tasks and duties
- Providing input in the creation of a menu with the Head Chef and management.
- Leading the kitchen staff in preparing ingredients in a timely manner.
- Assisting the Head Chef in managing kitchen service operations and administrative duties.
- Mentoring Junior Chefs in improving their kitchen skills.
- Assisting the Head Chef in inventory control, food portioning, and expediting orders.
How to become a Sous Chef
To become a Sous Chef, you will need years of leadership experience in a kitchen. Starting as a Commis Chef and learning to work with kitchen staff is a common pathway. To qualify for the role, job seekers must provide working knowledge in kitchen operations.
- 1.Complete a degree or culinary certification, or a combination of both, and gain work experience. Depending on the hiring requirements of the employer, getting hired as a Sous Chef may take months of study and three to five years of relevant experience.
- 2.Gain leadership experience in a kitchen. The ability to organize and manage people in a kitchen environment increases the chance of getting hired for the role. Experience mentoring Junior Chefs may also give you an advantage.
- 3.Take up certifications in a specific cuisine or a related culinary skills course. These may take three months to two years of study depending on the certification course. Some of these courses can be learned from the Technical Education and Skills Authority (TESDA).
